This is not a quick cook book by any means, and after you make a curry from it you will appreciate how hard the staff of a good curry restaurant work.
The effort goes into the making of the base sauce from which most curries are derived. Your ingredients have their own sauce which they are cooked in. One each for lamb, vegetable and chicken altough I have cooked the chicken in the lamb sauce when I could'nt be bothered to make a seperate chicken sauce. It tasted great.
You could also do away with the Kushi spice if you make your own curry powder from a good recipe. If you use bought curry powder then the Kushi spice is a must.
I have made the Patia from the book and it was fantastic. Tonight I made a Madras deciding to add tomato ketchup and ground almonds as per Pat Chapmans Balti Curry Cookbook. The result was as a my son said to me ' Its your best ever'
My view is this book and Pat Chapmans balti curry cookbooks are the only books for beating beating the restaurants you will ever need.

As a keen amateur, and long-term fan of proper Balti curries, this book is a gem. Even with my below-par cooking skills, I managed to achieve a convincing restaurant-style chicken rogan josh, amongst others. The book itself is a more like a manual than a cookbook, but that's what sets it apart. If you want a glitzy coffee-table book, then this may disappoint, but you'll be very surprised what you can achieve by following the recipes. Highly recommended.

This balti cook book is great. I never thought that I would be able to make a balti that tasted like one you would get in a restaurant-but I did! I like the fact that you can make such a range of curries from just one base sauce-and all of them that I have tried taste great!

I also really like the background information and the personal history of the co-author and restaurant owner-it makes the end product seem even more authentic.

I think this book is a must for any balti curry lover and is a great addition to any kitchen!
