A collection of simple yet very enjoyable dishes that make home cooked Vietnamese food a realistic prospect for budding cooks. The recipes are all clearly laid out with easy to follow instructions & descriptions of techniques (not many pictures though) & involve minimal prep & cooking time making these dishes a realistic proposition for those who lead busy lives. The dishes tend to be very light & those I've tried so far have been well worth the effort with interesting & well balanced combinations of flavours. a good read and nice recipes, BUT... (7/7 people found this helpful)... what happened to authenticity (I am Vietnamese), and who stole all the pictures? There are two pages of photos, one of frequently-used spices/herbs/etc. and one of a few prepared dishes), and that's it. I just bought this book yesterday and, having read every recipe it contained, am a tad bit disappointed. As was earlier said by another reviewer, this is more creative than authenic, especially the desserts. oh, well. Excellent instructions, clear and concise and well-written. (2/2 people found this helpful)The recipes are extremely easy to follow. I have been very impressed with the results to many of the dishes. I am Vietnamese and feel that the dishes are authentic with a twist. The only critical comment that I have is that I wish there were more pictures and photographs of the dishes. This cookbook rates as one of the best cookbooks that we have. By the way, we own 3 Vietnamese and Thai cookbooks and they are definitely sub-par compared to Mai Pham's book. Duplicate the elegant flavors of Thailand and Vietnam. (1/1 people found this helpful)I just spent a week at the Culinary Institute of America at Greystone, in Napa Valley, where Mai Pham was the featured chef. Each day we were presented with a new array of fabulous food from her book. The curry was the centerpiece dish, hotter and hotter as the week went by. The fishballs were sublime. I fell in love with vietnamese food 6 years ago and have frequented its restaurants since. A somewhat nomadic life has led to my search for vietnamese restaurants all over the country. I've been yearning for a book to help me recreate my favorite recipes at home. This book is more than I could have hoped for! The flavors are more wonderful than I've tasted in most restaurants. The recipes are very easy to follow and so far, I've been able to find all of the ingredients. Since finding this book, my home often is filled with the sweet aroma of pho, my belly happily sated with my favorite treats. Thank you, Mai Phun, for giving us this book!
