Recipes that start "Do not wash the meat, clean it with a piece of cloth removing blood and dirt, if any..." surely indicate the authenticity of these fine dishes. With this fantastic book one learns how to "bhunao thrice", how to "put on dum", and to "give dhungar, method No. 3." This book has been a source of fascination to me and my guests for over ten years and can always be relied upon to provide a feast fit for a maharaja.
