It's true, we just ordered our third copy of Emeril's Creole Christmas from Amazon. This one is not leaving the house! We own a catering business specializing in Deep South and Louisiana cuisine. No other cookbook in our collection captures the spirit and emotion of a Louisiana Christmas quite like this one. Buy it and use it all year round... but don't loan it out! Bam! AND it's so refreshing when you have a chef who not only loves food, but doesn't talk down to you. It was one of the first things that I enjoyed about his first book. As a recreational chef, I own an entire library of cookbooks. Mr. Lagasse is an excellent chef, and good enough not no feel the need to be pompous about it!
