(5/7 people found this helpful)I have been a fan of Madhur Jaffrey since her pioneering work published by the BBC and, selectively, have bought a number of her books - A Taste of India I found the most useful and regret that she never followed through on her own stated wish to write a second book on the regional cooking of India. From Curries to Kebabs (in the UK it is entitled The Ultimate Curry Bible) is for me a disappointment. The concept behind it and the narrative is interesting, but she backslides on her previous stance on cooking rules (what you must do and what you can get by without doing to retain authenticity of taste). Additionally some of the recipes are difficult to justify inclusion on culinary criteria though they support the narrative. After writing so many books and teaching (and I use the word advisably) numerous non-Indians to cook food from the sub-Continent well, it may be inevitable good recipes prove increasingly hard to find for publication (though her mother's recipe for spicy chickpeas has been included in at least three of her books): too many recipes in this publication do not warrant inclusion.
