Admirers of Ken Hom's many user-friendly books will need little encouragement to investigate Easy Family Dishes. This book stems from his observation that, while authentic Chinese food is immensely popular in restaurants, few home cooks in the West seem actually to be cooking the stuff. The reason, he believes, is that what Chinese cookery book recipes often represent is actually restaurant cooking, demanding a range of ingredients and techniques beyond the resources of the casual cook who simply wants to prepare a Chinese meal from time to time. Ken Hom has turned therefore to the food of his childhood in Chicago's Chinatown--"the simple, easy home cooking that I, as well as many of my Chinese-American friends, enjoyed every day". In a very personal mixture of recipes and reminiscences, he evokes the tastes and smells, the close family warmth (and the hard work) of the Chinese community of his childhood.
And the recipes? A few basic seasonings, such as soy, oyster sauce etc., recur; the ingredients are readily available and the techniques uncomplicated. Yet though the dishes are simple, they are never dull. Crispy Fish with Pan-Fried Bean Curd, Silky Steeped Chicken, even Mrs Wong's Braised Pig's Snout--from his apparently limited palette Ken Hom has drawn dozens of subtle and delicious dishes that will send his readers off to grab the nearest wok and start stir-frying. --Robin Davidson
