Ever feel a bit intimidated by fish? Don't quite know which is which? What to do with them? Which ones we should be eating? I was, and tended to walk past the fish counter and over to the chilled meat section for some chicken (again). Hugh F-W has put a stop to that. Really good recipes, but much more important than that, he has opened my eyes to a whole new world of fish. I now happily buy something that looks good and doesn't cost the earth, confident in the knowledge that when I get home Hugh will see me right.

This book is a 'must' for anyone who likes cooking and eating fish. It is comprehensive, authoritative, beautifully illustrated amd written, and full of lovely recipes. Starting off with a section on 'Understanding Fish' the authors lead you through how to source and prepare fish and shellfish, and then go on to demonstrate, over 300 pages, the various ways in which they can be cooked or smoked. In the last section they provide a detailed and fascinating guide to both saltwater and freshwater fish, cross-referenced to the recipe sections earlier on. The book is rounded off with a useful directory and an excellent index. Given its scope it's not surprising that it's a large and fairly heavy book - but don't let those details put you off. 'The River Cottage Fish Book' is a joy - buy it: you won't be disappointed.

I bought this book for my boyfriend after he saw it at a friends house - despite several other, perhaps more significant presents, this is the one he rates as tops - everything you want to know apparently.

Was at a friend's house and saw this in her kitchen....had a idle flick through. As soon as I got home, I ordered one of my own! I love fish but am not all that au fait with what's what - this book tells you everything. How to choose them, how to store them, how to gut/fillet them and how best to use them. There are some utterly devine receipes and all of them simple - Hugh also gives alternative fish ideas should you not have/like/want the main fish suggested. His Quick Pasta Supper receipe is a complete winner - sooooo simple, and completely delicious! And who would have thought a "Kipper Carbonara" could get you going? It's an awesome book - it has pride of plaice (excuse the pun!) in my kitchen. See it, want it, buy it - LOVE IT! :)
